Background

Located near Newburg, PA in the Cumberland Valley, this family dairy farm has been raising registered Jersey cows since 1974 and started farming in 1978. In February 2001, they began making aged raw milk cheeses in their small, licensed on-farm cheese plant. By February 2006, they added a pasteurizer to produce fresh products like ricotta, soft cheese, and chocolate pudding. A devastating fire on December 13, 2022, destroyed significant parts of their operation, but with community support, they rebuilt and resumed processing milk by July 7, 2023.

Practices

The farm employs organic practices, avoiding antibiotics, hormones, herbicides, pesticides, and chemical fertilizers for nearly forty years. Cows are rotationally grazed on lush pastures, eating fresh grass in season and dry hay in winter, with no fermented feeds. The cheese is handmade using traditional methods, fresh milk, live cultures, and calf rennet, resulting in a natural creamy yellow color that varies with the seasons.

Of note

The farm offers a variety of raw milk cheese including Camembert, Tallegio, Tommes, Goudas, and Cheddar, as well as probiotic yogurt and pasteurized fresh cheeses. After the fire, their cows were temporarily housed at Nice Farms Creamery in Maryland. The farm's rebuilding efforts and return to production were supported by dedicated customers, friends, and family. Their progress can be followed on Facebook and Instagram.
