Background

In 1989, the B Bar Ranch in Big Timber, Montana began with 15 cows and a bull to preserve the Ancient White Park Cattle breed. Over the years, the herd has expanded to over 150 females and a full battery of bulls, and the ranch is now prepared to sell these animals as beef.

Practices

The cattle are raised without the use of hormones or other growth promotants, and no low-level antibiotic use occurs. Animals requiring antibiotic treatment for illness are removed from the White Park Beef program. The land has been certified organic for over 10 years, and the cattle are almost eligible for organic certification. Harvesting begins when the animals and pastures reach peak condition in July and continues into late November or early December. Detailed records are maintained on the identity of the animals from birth to table, and the USDA inspected local processor does not irradiate the meat.

Of note

The ranch offers meat cut and packaged to customer specifications, available in cryovac or plastic wrap and white freezer paper. They sell by the head, half, quarter, and half quarter, as well as sampler packages of cuts.
