The cattle, primarily Jersey and Jersey cross breeds, are chosen for their superior meat quality, including greater tenderness, juiciness, and higher monounsaturated fat concentrations, which are considered cholesterol-lowering. The pigs are raised outside, free to root and browse, with the addition of organic feed.
