About the Farm
Background
Wilson Prairie View Farm was purchased in the 1870s by John and Jeannie Wilson, immigrants from Scotland. The farm, located just outside Burlington, WI in Walworth County, has been passed down through generations, with each contributing to its growth and specialization in hog farming. Ralph Wilson introduced Hampshire hogs in 1943, later adding Yorkshire, Landrace, Durocs, and Crosses. Scott Wilson, a fifth-generation farmer, currently manages the operations, with his children also actively involved. In 2004, Scott purchased the Elkhorn Locker Plant, renaming it Wilson Farm Meats, which offers custom butchering, processing, and packaging services.
Practices
Wilson Prairie View Farm is the only SPF-certified hog operation in Wisconsin, ensuring disease-free and rigorously tested herds. The farm grows much of its feed, including corn and soybeans, directly on-site. The Wilson family employs in-house collecting and breeding to maintain purebred quality, testing all breeding lines for stress before introduction to the herd. Their commitment to humane handling, food safety, and sanitation is underscored by their USDA-inspected facility status, which includes procedures like HACCP, retail guidance, and recall processes.
The Rest
Wilson Farm Meats offers a variety of fresh and frozen cuts of meat, along with cured and smoked products made in-house. The Wilson Whistlestop, built in early 2020, provides a true farm-to-table experience. The farm's genetic results have gained international acclaim, with their elite breeds selected by producers with the strictest pork standards. The farm's services include custom butchering, processing, and packaging, catering to local customers seeking high-quality, locally raised meat.
