Practices
The farm raises Scottish Highland cattle that are grass-fed and grass-finished, ensuring no artificial additives, hormones, or antibiotics are used. The cattle's thick double hair coat reduces the need for a layer of fat to stay warm, resulting in well-marbled but very lean meat. The meat is processed under USDA inspection, dry aged for 18 days, and vacuum packed for optimal storage.
