About the Farm
Background
Located just outside of Red Hook Village in the Hudson Valley, the farm has built a reputation for providing the community with fresh, organic produce and pastured eggs. They have established a strong presence in the local food system, feeding individuals and families throughout Red Hook, Milan, Rhinebeck, Tivoli, Germantown, and Hudson. Their CSA program, which runs for 22 weeks from June through October, offers members a variety of fresh produce and access to a Pick-Your-Own Plot.
Practices
The farm employs organic farming methods and focuses on the use of high tunnels to extend the growing season and diversify crops. They grow specialty crops such as ginger, garlic, turmeric, hibiscus, lemongrass, peppercorn, and chicories. They also experiment with cold-hardy citrus. Collaboration with chefs, fellow growers, and local producers is integral to their approach, allowing them to innovate and share sustainable, economical, and replicable systems with other producers. Many crops undergo processes like fermentation and drying to enhance flavor and extend availability.
The Rest
The farm partners with neighboring farms to offer CSA members additional shares of grass-fed meats, cheeses, mushrooms, and flowers. They also participate in the Beacon Farmers Market in September and October. The farm's commitment to innovation is evident in their production of black garlic through fermentation and the forcing of chicory varieties to provide tender greens in winter.
