About the Farm
Background
Memories from the grandfather's generation include pulling sap-filled milk cans through the forest on sleds. Today, the Southwell family continues the tradition with modern technology, collecting sap from 2,250 taps.
Practices
Located far from conventional farms using chemical pesticides or fertilizers, the farm uses high-pressure vacuums and tubing for sap collection and fires the evaporator with wood to maintain a rich, distinct flavor.
