About the Farm
Background
Sobremesa began in 2014 under the stewardship of husband and wife team, Jason and Caitlin Elberson. After five years of homesteading in Marshfield, VT, they moved to an 8-acre farmstead outside of Burlington, Vermont. Known for their fabulously flavorful ferments, they have built a reputation for traditional kimchi, classic sauerkraut, and taco-inspired Fiesta Roja curtido.
Practices
The farm sources organic Vermont produce from Full Moon Farm, Pete's Greens, Friends & Neighbors Organic Farm, and The Last Resort Farm, all certified organic by Vermont Organic Farmers (VOF). They raise registered Icelandic sheep on pasture for meat and fiber, maintain a diversified flock of heritage breed laying hens, and occasionally raise turkeys, chickens, guineas, and ducks. Vegetables and herbs are grown, and perennials are being established. Fermented products are made without vinegar or sugar, emphasizing natural fermentation processes.
