About the Farm
Background
The farm specializes in raising Highland Cattle, a Heritage Breed known for its suitability to grass feeding and finishing. The farm is a member of both the American Highland Cattle Association and the Midwest Highland Cattle Association, and adheres to the American Highland Cattle Association's Quality Highland Beef program.
Practices
The farm does not use hormone supplements or feed antibiotics. It is MAEAP certified in Farmstead, Cropping, and Livestock Systems, and also certified under the Beef Quality Assurance program, which promotes best practices in cattle management. The beef is dry aged to enhance flavor and tenderness, and vacuum packed at a USDA processor.
The Rest
The farm has a licensed warehouse facility, allowing it to sell beef by the cut or in larger quantities. Reservations for grass-fed beef bundles can be made through the website, and sales from the farm are by appointment only.
