The farm utilizes a covered high tunnel structure to extend the growing season for hardy vegetables into late fall. Several gardens are tended to produce a generous supply of seasonal vegetables, ensuring a steady flow of fresh produce from early spring through late autumn.

Early spring offerings include spinach, kale, cabbages, broccoli, radishes, green onions, and turnips, while summer brings green beans, tomatoes, cucumbers, peppers, and summer squashes. The high tunnel structure allows for fresh vegetables to be available even around Thanksgiving.
