Background

The founder, born in Dublin, Ireland, immigrated to the United States at a young age. Despite a family background far removed from farming, she pursued a career in law before realizing it wasn't her true calling. Inspired by a book about cheesemaking, she took a class in the Berkshires and decided to open her own creamery. Initially renting facility space, she eventually settled on a 40-acre spread in Chehalis, Washington, in 2012. Over the years, the business has grown, fueled by her passion for cheese and the joy it brings to people.
