About the Farm
Background
Aaron, Ben, and George MacDonald are the owners of Heritage Cattle Company, a local family farm operating in the county of Peterborough, Ontario. They have a passion for good farming practices, believing in quality of product and quality of life. Known for their dedication to raising cattle the old-fashioned way, they ensure that the same quality beef they want to eat is the same quality beef they sell. Their farm benefits from being far from big cities, allowing their cattle to graze on clean, unpolluted, natural wild grasses.
Practices
The cattle are raised free range, without the use of added antibiotics or growth hormones. They graze on a mix of natural wild grasses and legumes, supplemented with hay in the winter. The farm practices regenerative farming, focusing on a thriving soil and diverse cover crops to regenerate the soil and pasture. The beef is dry-aged for two to three weeks to ensure maximum tenderness and flavor. The farm can trace every animal from start to finish to ensure health, freshness, and safety.
The Rest
The beef is available at the farm by arrangement or online. Local butchers include Otonabee Meat Packers in Keene, Ontario, Hilts Butcher Shop in Norwood, Ontario, and VG Meat Packers in Simcoe, Ontario. Buying locally raised beef reduces transportation and pollution, making it an environmentally responsible choice. The dry-aging process, seldom found outside of steak restaurants and upscale butcher shops, enhances the taste of the beef.
