Background
Operating out of Winchester Bay, Oregon, the family fisherman has been known for his attention to quality and direct contact with customers. The vessel, FV James Lee, facilitates direct sales of Salmon and Albacore tuna during the spring, summer, and fall months.
Practices
On the James Lee, tuna are caught one at a time with hook and line, ensuring minimal bruising. The fish are bled immediately, rinsed, and placed into a spray seawater salt brine at an average temperature of 2 degrees Fahrenheit to rapidly reduce their internal temperature. The albacore are offloaded with an internal temperature of approximately 4 degrees Fahrenheit and delivered to an inspected and licensed processing facility for canning.
The Rest
The fisherman offers four canned albacore tuna products: Salt free, Sea salt added, Garlic Jalapeno, and Smoked. The salt-free variant contains only albacore, while the sea salt added version includes a pinch of sea salt. The Garlic Jalapeno variety features sea salt, granulated garlic, and fresh jalapeno, and the smoked albacore is marinated with Kosher salt, brown sugar, and spices before being lightly kippered with kiln-dried alder.
