About the Farm
Background
Located in northeastern Oregon, this family farm has been certified organic by Oregon Tilth since June 2000. They are known for their annual crop of about 250 lambs and 25 beef, harvested from late July through September to capture the meat at its prime off grass.
Practices
The farm's pastures are irrigated by snowmelt from the Eaglecap Wilderness, and they strictly avoid hormones, antibiotics, by-products, GMOs, feedlots, and irradiation. The animals are processed at a USDA inspected, organically certified plant. To maximize tenderness and flavor, beef carcasses are dry-aged for three weeks and lambs for one week before the cuts of meat are cryovaced and deep frozen.
The Rest
The farm offers the usual domestic cuts of lamb and beef as well as sub-primal cuts of beef. Frozen meat is available year-round, though the selection becomes more limited as the season progresses. Orders can be placed by phone, email, and regular mail, and are shipped almost anywhere in the US at the customer's expense. Prairie Creek Farm can include their meat in weekly deliveries of produce to restaurants in Portland, Oregon.
