About the Farm
Background
Dayspring Dairy, Alabama's first licensed sheep dairy, was founded after the owners were inspired by a visit to a Tennessee sheep dairy in 2010. They purchased their farm in Gallant, Alabama in 2011 and began construction on their dairy and creamery in 2012. The farm is family owned and operated, with Greg Kelly shepherding the flock and Ana Kelly serving as the head cheesemaker.
Practices
The farm's sheep graze on lush, native pastures year-round, without the use of pesticides or commercial fertilizers. The sheep are never given hormones, ensuring the highest quality milk. The farm focuses on sustainability and agritourism, producing cheeses that reflect the unique terroir of their rolling pastures in the southernmost region of Appalachia. Milking occurs from February through September, allowing for subtle flavor changes in the cheeses throughout the season.
The Rest
Dayspring Dairy also produces True Ewe branded sheep milk caramel, which has won awards such as Garden & Gun Magazine’s Made in the South Awards. The farm offers tours and has a farm store for visitors. The name 'Dayspring' is a biblical reference.
