About the Farm
Background
Columbia Mushroom Company began in a small greenhouse in the corner of Neil’s living room while he was pursuing a career in growing liquid yeast for the brewing industry. The project quickly expanded from a room-within-a-room to a new property, allowing for quadrupled production. The growth of the company has been marked by innovation and experimentation.
Practices
Simplicity and consistency are key at Columbia Mushroom Company. Using specialized mushroom cultivation bags, the mycelium first colonizes a grain substrate before inoculating a sterilized mixture of supplemented sawdust. Once fully colonized, the sawdust bags are cut open to expose the mycelium to oxygen, prompting the production of fruiting mushroom bodies. The fruiting room is meticulously controlled for light, humidity, and airflow to ensure optimal growth. Mushrooms are picked to balance flavor and shelf-life, then hand-packaged and hand-delivered to restaurants, wholesale buyers, and local farmers markets.
