Background

Situated along the Coeur D’Alene River, Castle Rock Ranch has become known for its dedication to raising grass-finished beef from heritage breed cattle. The ranch specializes in Aberdeen Angus and Dexters, which are smaller framed and produce more manageable cuts of meat. Customers can purchase beef by the quarter, half, or whole, with each quarter yielding approximately 75 pounds of packaged beef. The ranch only harvests from July through November to ensure all animals have had at least 90 days on green, growing grass, maximizing nutrition and quality. The beef is dry-aged for 10 days and custom cut by local butchers.

Practices

Castle Rock Ranch employs an unconventional management style, moving cows onto fresh pasture daily to mimic the grazing patterns of wild herds. This practice builds topsoil, increases water infiltration, and enhances biodiversity, which are essential for a healthy ecosystem. The ranch never feeds grain or uses growth hormones, antibiotics, synthetic fertilizers, herbicides, or pesticides. The goal is to create tender and flavorful meat with fat and inter-muscular marbling. The cows are raised on diverse pastures and rotated regularly to ensure the well-being of both the animals and the land.

Castle Rock Ranch emphasizes regenerative agriculture and the protection of the Coeur D'Alene watershed through responsible management practices. The beef is available for pickup at the butcher in Coeur D’Alene or at the ranch, with delivery possible to the Seattle area. The ranch does not mail beef. Visitors are encouraged to come and experience the natural beauty and the commitment to a healthy environment.
