About the Farm
Background
Birchwood Farm was established in October of 1943 by Howard Tierney, who moved from Connecticut with his family. He produced a variety of farm fresh products using Jersey milk, which he sold locally and in New York City. After his death in 1961, production ceased until his grandson decided to revive the farm's dairy operations, maintaining the original recipes and standards.
Practices
The farm adheres to organic certification standards, with a focus on grass-only feeding for their Jersey herd, ensuring no grain is used. They also raise heritage breed beef and Tammworth pork on pasture, along with organic pastured chickens. Modern equipment is used to maintain high standards of production while preserving the integrity of the original family recipes.
The Rest
The farm continues to produce a variety of dairy products including unpasteurized milk, cream, clabbard cream, cheese, butter, ice cream, and pudding, all made using traditional methods passed down from the founder.
