Background
In 2005, noticing the lack of availability of certified organic beef sausage, particularly beef summer sausage, the business decided to develop an entirely new product. They aimed to create a healthier sausage product that was lower in fat, cholesterol, and sodium, and free from nitrite preservatives and monosodium glutamate.
Practices
The business uses certified organic grass-fed Belted Galloway cattle, a heritage breed, to produce their beef products. They prioritize maintaining the vitamin and polyunsaturated fatty acid content characteristic of grass-fed beef.
The Rest
The partnership with Peter Blokhuis, a USDA and Certified Organic processor schooled in European methods of meat processing and sausage production, was critical to developing their unique summer sausage product.
