Practices
Calves are born on the farm and raised to 24 months, consuming only grass, minerals, and mountain spring water. The farm produces its own hay for winter feeding and avoids the use of antibiotics, hormones, and commercial feeds. Beef is dry-aged for 2–3 weeks to enhance flavor and tenderness. Piedmontese cattle, known for their 'double-muscled' physique, provide extremely lean meat with high tenderness ratings.
