Kahiltna Birchworks/Alaska Wild Harvest has been harvesting birch sap from 11,000 trees each spring to produce birch syrup, a rare commodity with less than 4000 gallons produced worldwide annually. Over the past four seasons, they have produced between 1,300 and 1,500 gallons each year, making them the world's largest producer of birch syrup as of 2017.
Practices
The process of making pure birch syrup involves concentrating birch sap to pure syrup without any additives. For their birch breakfast syrup, they concentrate the sap to about 60% and then add organic evaporated cane juice. Emphasizing sustainable use of Alaska's forest resources, they practice good stewardship and conservation to maintain the health of the people and the fragile ecosystems in which they operate.
The Rest
Visitors can enjoy a fun and educational tour of the facility, taste various birch syrup and berry products, and explore the All Alaskan gift shop featuring local food products and functional art. The facility also offers local ice cream, snacks, baked goods, smoked salmon, good coffee, and chaga tea. Additionally, they hire interns each spring to assist with the harvest and summer operations.
