Valserena Parmigiano Reggiano Cracking

Taste freshly cracked cheese from the oldest Parmigiano Reggiano dairy in Parma! This event is open to the public on Thursday, June 12th at 5:30pm and will include samples, pairings, and refreshments with plenty of freshly cracked parm available to take home.
Valserena has been producing Parmigiano Reggiano since 1879, making it the oldest farmstead producer of this PDO (Protected Designation of Origin) cheese, meaning they grow the feed, raise the animals, and make this cheese all at their farm. The recipe for this brown cow's milk (Bruna Alpina) Parmigiano Reggiano is almost 150 years old, handed down from father to son for six generations.
The farm is operated today by Giovanni Serra and his sister Antoinetta – who is a veterinarian and knows each cow by name. The cows are born and raised in Valsernea, grazing on over 17 acres of the farm's fodder. Aromas of sweet cream and flavors of candied nuts make this a delicate, yet complex cheese.
