A few words from Agata Dean.
My love for cooking began at a young age, enchanted by my father's culinary skills at our home in the remote Polish mountains. I observed traditional methods passed down by elders and foraged wild foods in forests and meadows with my dad throughout the year.
My culinary journey has been a continuous weaving of experiences, working in various environments and restaurants with diverse cultural backgrounds. I've traveled extensively, immersing myself in local kitchens and graduated from the School of Ecology and Traditional Healing in Wrocław, Poland. There, I delved into the study of different dietary systems such as macrobiotics, traditional Chinese medicine focusing on food as medicine, Ayurveda, and the traditional herbal and dietary healing of Slavic people.
Upon arriving in New York in 2014, I was invited to co-create Jungle Cafe, a vegan restaurant in Brooklyn promoting nutrition, health, and holistic wellbeing within the community where for few years I worked as the head chef.
I am a wife and mother to two fast-growing girls and a Rat Terrier, residing in the forests of the Catskills mountains. I enjoy hiking, gardening, and outdoor living, and I am a student of Sacred Traditions and ancestral knowledge.
As a plant-based chef, I am actively involved with the Flowering Sun Ecology Center and Farm in Ellenville, NY, where organic mushroom cultivation and education are central. Additionally, I recently launched NewYorkVegan Cheesecake, producing delectable plant-based desserts.
The concept of the Polish Mushroom Feast emerged from idea to collaborate with Collar City Mushrooms and establish mycelium -like, closer connection to inspire and learn from each other . I am thrilled to share my work with those eager to deepen their connection and knowledge of the fungal kingdom, offering dishes that hold a very special place in my heart.
