About the Farm
Background
Mike Kokas and Jan Greer founded Upstate Farms in 1989 to address the lack of fresh, local produce available to NYC restaurants. Initially, they sold foraged mushrooms door-to-door to chefs in the city. Over the years, they expanded to include produce and dairy from family-owned farms across New York State. Today, Upstate Farms represents over a thousand acres of farmland and continues to deliver high-quality products to many of New York City's renowned chefs.
Practices
Upstate Farms emphasizes the connection between small family farms and urban consumers. They grow vegetables and forage for wild edibles on their own farm, Paisley Farm, located in Tivoli, NY. Their offerings include herbs, foraged greens and mushrooms, maple syrup, honey, and vegetables. By maintaining a close relationship with their network of farmers, they ensure that the produce and dairy products are of the highest quality and sustainably sourced.
The Rest
Upstate Farms offers a Farm Box service, delivering produce, eggs, and dairy from a mix of New York State farms directly to customers' doors or local pick-up points. This service allows home cooks to use the same ingredients enjoyed by Michelin-starred chefs, supporting small family farms in the process. Additionally, Jan and Michael host chefs from the Michelin-star restaurant Blue Hill at Stone Barns for foraging events and pig roasts on their farm.
