Highland Hills Apiary began its journey in late 2020 and quickly expanded to 50 colonies. Known for their locally adapted, swarm-trapped feral bees, they have become a trusted source for high-quality honey products in Ohio. Their bees are celebrated for their gentle nature, impressive honey production, and natural mite resistance.
Practices
Highland Hills Apiary prioritizes the well-being of their bees by avoiding the use of chemicals and relying on locally adapted feral bees. These bees are sourced through swarm trapping and have developed genetic modifications that allow them to thrive naturally. Honey is carefully collected and extracted using radial extraction from combs aged 1-3 years, then filtered with stainless steel 300-micron filters to preserve beneficial components. The honey is stored in 100°F water-jacketed stainless steel bottling tanks or in 5-gallon food-safe buckets.

Highland Hills Apiary offers a diverse range of honey products, including raw spring and summer honey, creamed honey, and infused honey varieties like hot pepper, ginger, and lavender. They also provide bee wax products, NUCS, and grafted queens. Their products are available at the Champaign County Farmers Market from May through October, where visitors can enjoy free tastings. The apiary emphasizes the importance of using locally adapted bees and advises against purchasing non-local package bees.
